Easy Maple Rhubarb Compote

Maple Rhubarb Compote served over our Roasted Strawberry Ice cream

Let's face it, we don't always have the time or the desire to make a pie, so why not still enjoy the best part- the filling- which is healthy and delicious!

30 minutes


  • 4 cups rhubarb, chopped into 1 inch pieces
  • 1 cup granulated pure maple sugar
  • 1 whole vanilla bean, split
  • pinch of sea salt
  • splash of water


  1. Wash and cut rhubarb into 1 inch chunks 
  2. In a medium size sauce pan, combine rhubarb, maple sugar, vanilla, water and salt 
  3. Partially cover and bring to a simmer under medium-low heat for 30 mins or until rhubarb is very saucy 
  4. Remove and discard vanillia bean
  5. Let cool and serve over our Maple Yogurt Parfaits, Roasted Strawberry Ice Cream, Maple Vanillia Granola or Multi Grain Pancakes & Waffles
