Melt-in-your-mouth good, these caramels make for the perfect "adult candy," or skip the whiskey and create a healthier caramel that your kids can enjoy too!
1 cup heavy cream
5 tablespoons unsalted butter, cubed
2 tablespoon Vermont Whiskey
1/2 teaspoon salt
1 1/2 cups granulated maple sugar
Line an 8-inch baking dish with parchment paper. Combine heavy cream, butter, whiskey, and salt in a heavy saucepan over medium-high heat. Once mixture boils, immediately add maple sugar and heat till 250 degrees. Stir just at the beginning with a heatproof spatula; stop stirring once sugar begins to melt.
Once the mixture reaches 250 degrees, CAREFULLY pour the caramel into prepared pan and let cool at room temperature for 30 minutes. Place uncovered pan in the refrigerator and cool for 2 hours or more to set.
Lift parchment to remove caramel from pan and place on a cutting board. Cut to desired size and shape with sharp knife.
Individually wrap candies in wax or parchment paper.
