On December 16th, the Canadian Food Inspection Agency announced that the Canadian Maple Products Regulations have been amended. The changes harmonize the definition and grading system in Canada and the United States. Like the rules pending here in the States, the new Canadian standards modernize the current grades and color classes of maple syrup, introducing new flavor descriptors that will help consumers make more informed choices when buying pure maple syrup. The amended regulations will be published in the Canada Gazette, Part II on December 31, 2014. A two year implementation period has been provided to allow maple syrup producers to make the transition. Approval of similar regulations here in theUnited States is currently awaiting final approval from the USDA, which is expected in early 2015.
