Apple Frittata with Cheddar & Thyme

The tang of apple, saltiness of bacon, the sharpness of cheddar cheese and the warmth of our Sweet Heat Maple Syrup cocooned in fresh farm eggs, make this frittata a wonderful main or side dish.

INGREDIENTS

  • 1 teaspoon olive oil​
  • 1 small red onion, finely chopped​
  • 2 apples (Cortland or Macintosh) peeled and sliced​
  • 1 tablespoon Sweet Heat Maple Syrup​
  • 2 slices of bacon, precooked​
  • 3 eggs​
  • 2/3 cup whole milk​
  • 1/2 cup cheddar cheese, grated​
  • 2 tablespoons fresh or dried thyme​
  • Pinch of salt and pepper​

INSTRUCTIONS

  1. Preheat oven to 350°F.
  2. Heat a frying pan over a medium heat, add oil and onions – sauté until the onions are translucent. Add apples, bacon and maple syrup, cooking for an additional minute. Remove from heat.
  3. Mix eggs and milk together in a bowl. Add cheese.
  4. Melt butter in a cast iron pan. Season the pan with salt and pepper. Pour in the egg mixture. Place apples, onions and thyme on top.
  5. Bake for 5 to 8 minutes until the omelet is set and firm.
  6. Serve warm with toast.
