Avocado Toast with Halloumi

Salty slabs of halloumi sit on a throne of avocado and fresh arugula. All of these bright elements are brought together with the finishing kick of spicy maple syrup. This results in an upgraded avocado toast you’ll crave day after day: avocado halloumi toast with spicy maple syrup!

Halloumi and pure maple syrup are a heavenly combination. The salty, squeaky cheese and sweet, robust syrup are a pairing akin to peanut butter and jelly or milk and cereal. They’re classic and complimentary. We pair the two in bowls, or on a plate with fresh berries. And now, we stack the pairing on top of smashed avocado for an easy-to-make and quick-to-devour avocado halloumi toast.

Because halloumi is salty in nature, we refrain from adding more than pinch in the avocado mash. We don’t want chapped lips after lunch! The spicy maple syrup does, however, cut through that saltiness with a sweet and spicy layer.

The amount of spicy maple syrup added is up to you! Anything from a drizzle to a dousing works. It’s all dependent on what you prefer. We tend to pour somewhere in between! In our maple minds, you can’t go wrong.

INGREDIENTS

  • Drizzle of olive oil
  • 1 packet of halloumi, sliced (but not too thin!)
  • 2 slices sourdough bread
  • 1 ripe avocado, pitted
  • Salt, to taste
  • Red pepper, to taste
  • Squeeze of lemon
  • 1/2 cup, or about a handful, of arugula, washed and dried
  • Spicy maple syrup

 

INSTRUCTIONS

  1. Grease a skillet with a drizzle of olive oil and place it over medium heat. Add the slices of halloumi and cook for 2-4 minutes. The halloumi will release some liquid. Once the cheese is golden, flip and cook for 1-2 minutes more. The second side will cook much faster! Transfer cooked halloumi slices to a clean plate.
  2. While the halloumi is frying, toast the two slices of sourdough to your liking.
  3. As the bread toasts, smash the avocado in a small bowl with salt, red pepper and a squeeze of lemon juice. It’s good to note that the halloumi is salty, so a pinch in the avocado will do!
  4. When the toast is ready, smear the avocado on the slices. Spread the arugula over the avocado and divide the halloumi over the toast. (Depending on how you sliced the halloumi, you may have extra slices. Enjoy them as a snack with fresh fruit or put them on a salad!) Drizzle spicy maple syrup over the halloumi and enjoy!
