INSTRUCTIONS

  1. If a batch of Maple Candied Bacon isn’t already prepared, cook bacon of your choice in a skillet, flipping once until crispy. Transfer to a paper towel lined plate to drain.
  2. Heat the olive oil or butter in a small skillet over medium-high heat. Add the eggs. Using a rubber spatula, begin pulling the eggs from around the perimeter into the center until they begin to scramble, about 1 minute. flip the eggs and cook until done, about a minute more. Transfer the eggs to a plate.
  3. Over medium-low heat, add the slices of bread to the skillet. Top with a slice of cheese, and cover the skillet, cooking until the cheese has melted slightly and the bread is toasted, about 2 minutes. Careful not to burn the bottom!
  4. Transfer the bread to a plate, top with eggs, and bacon! Dress up with hot sauces, as you please!
