Old fashioned oats become so much more than oatmeal when they’re ground into a flour. Take, for instance, this Baked Oat Pancake. It’s a cake! That you can eat for breakfast!

Prepared in the style of a Dutch Baby pancake, this oat flour based pancake stays flat but just as custard-y as its inspiration. While the Baked Oat Pancake doesn’t yield the dramatic peaks and valleys Dutch Babies are known for, it does yield buttery, crunchy edges that won’t have you missing those syrup collecting divots.

To compliment the cake’s soft chew and the oat’s earthy flavor we add apples on top. But not just any apples. We cook a crisp variety (Honeycrisps work great) in a sweet slurry of maple syrup and butter until they become soft. Spoon them over slices and finish with an extra drizzle of maple syrup, just because.

Quickly blend up this batter on a weekday morning and enjoy slices with fresh or stewed fruit all day long. Take things to the next level by smearing pure maple butter on top before adding apples.

INGREDIENTS

For the cake

  • 4 tablespoons unsalted butter
  • 1 cup oat flour*
  • 2-3 tablespoons maple sugar
  • 1/2 teaspoon pumpkin spice
  • 1/4 teaspoon salt
  • 1 cup milk
  • 4 eggs
  • 1 teaspoon vanilla extract

For the apples

  • 1 tablespoon unsalted butter
  • 1 tablespoon maple syrup
  • Pinch of salt
  • 1/4 teaspoon cinnamon
  • 1 apple, thinly sliced

*If you don’t have oat flour on hand, but do have old fashioned oats, blend a scant 1 cup of the oats into a powder. You’ll blend this flour further with the remaining ingredients.

INSTRUCTIONS

  1. Add 4 tablespoons of butter to a 9″ cast iron skillet. Pre-heat the oven to 425F and place the skillet on the center rack. The butter will melt and likely brown, adding a nutty characteristic to the cake.
  2. In a blender or food processor, add the oat flour, maple sugar, pumpkin spice, salt, milk, eggs, and vanilla extract. Blend until you have a smooth, frothy batter, about 15 seconds.
  3. Once the oven has pre-heated, carefully remove the skillet and swirl the butter around the pan. Pour the batter in and bake for 20 minutes, until the top is golden and the edges are crisped.
  4. As the cake bakes, make the apples. In a small skillet over medium-high heat, melt the butter. Stir in the maple syrup, salt and cinnamon. Toss the apples in the sweet slurry and cook until soft, about 5-7 minutes.
  5. Allow the cake to cool slightly, about 3-5 minutes, before serving. Top with the soft maple apples and a little extra maple syrup!
