Brie Grilled Cheese with Maple Caramelized Onions

This is a grilled cheese sandwich that’s all grown up. Brie slices melt into a delectable layer upon which crisp, tart apple slices and Sweet Bourbon caramelized onions sink into for a perfect bite.

INGREDIENTS

  • 1 tablespoon unsalted butter, room temperature, plus more for pan​
  • 1/2 teaspoon Dark Robust maple syrup​
  • 2 tablespoons soft goat cheese​
  • 1 garlic clove, minced​
  • 2 teaspoons chopped chives​
  • Red chili flakes, to taste​
  • 2 slices of white bread; sourdough, pullman, or Maple White Bread​
  • 1/2 wheel of brie cheese, sliced​
  • Sweet Bourbon Caramelized Onions
  • 1/2 Granny Smith Apple, thinly sliced​

INSTRUCTIONS

  1. In a small bowl, mix the softened butter and maple syrup together until thoroughly combined.
  2. In a separate small bowl, combine the goat cheese, minced garlic, chopped chives and chili flakes.
  3. Spread the maple butter on one side of each slice of bread. This will be the outside of the grilled cheese. On the opposite side of the bread slices spread the garlic and herb goat cheese.
  4. On the garlic and herb side, arrange the brie slices, caramelized onions, and apple slices. (Leftover caramelized onions can be stored in the refrigerator.)
  5. In a non-stick skillet over medium heat, add a pat of butter. Allow it to melt, swirling the pan to coat it. Carefully place the grilled cheese sandwich in the pan and toast on one side until golden, about 1-2 minutes. Lift the sandwich up with your spatula after 1 minute to check that it isn’t burning. If it is, flip and lower heat. Once golden and crisp, flip and toast the other side. Press down on the sandwich with the spatula. If the brie isn’t melting, cover the skillet for 30 seconds. Toast until golden, about 2 minutes more, checking occasionally to make sure the sandwich isn’t burning.
  6. Slice in half and enjoy with chips and lemonade!
