chocolate zucchini bread

The 2024 Paris Olympic village had the chocolate muffin, and Vermont has a surplus of zucchini. This does not exactly sound even, or the same thing, but stick with us. Thankfully this abundance of zucchini can be shredded and folded into a batter for a fudgy chocolate zucchini bread that satiates our chocolate cravings and settles our feelings of missing out on Olympic pastries.

We give this chocolate zucchini bread even more of a New England edge with the use of maple. Using maple sugar instead of cane sugar offers baked goods a richer flavor and a bolder bite. In the case of this chocolate zucchini bread, maple sugar offers a wholesome baseline of sweetness. But it’s the chocolate that takes the cake.

Chocolate is the star while maple sugar and zucchini take wholesome supporting turns. The zucchini melts into the chocolate canvas. Each slice of the bread is more like cake than anything else. The melted bits of chocolate chips add a burst of chocolate to each bite. You’ll start to wonder if there’s actually a medium sized zucchini hidden somewhere amidst the fudge. (There is! And its moisture is an important part of the recipe!)

INGREDIENTS

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup maple sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 large eggs
  • 1/4 cup vegetable oil, or avocado oil
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon maple syrup
  • 1 1/2 cups shredded zucchini
  • 1 cup chocolate chips

INSTRUCTIONS

  1. Pre-heat the oven to 350F and fit a 5.25″ x 9″ loaf pan with parchment paper.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, maple sugar, baking soda, baking powder and salt.
  3. In a small mixing bowl, whisk the eggs, vegetable oil, Greek yogurt and maple syrup together.
  4. Using a rubber spatula, mix the egg mixture into the flour mixture until no dry spots remain. The batter will be thick. Stir in the zucchini. The moisture from the zucchini will thin the batter! Add the chocolate chips, reserving some to sprinkle on top of the bread.
  5. Pour the batter into the prepared loaf pan, smoothing the top. Bake for 55-60 minutes, or until a toothpick inserted in the middle of the bread comes out clean. (It may have some chocolate from the melted chocolate chips on there, but that’s okay!) Allow the bread to cool before serving warm.
