A simple Irish soda bread recipe that is naturally sweetened with real maple syrup and spiced with cranberries and orange. Perfect for breakfast, on the side or as a snack!

INGREDIENTS

  • 2 cups whole white flour​
  • 1 teaspoon baking powder​
  • 1 teaspoon baking soda​
  • 1/2 teaspoon fine sea salt​
  • 2 eggs​
  • 1 cup buttermilk​
  • 1/4 cup maple syrup, Dark Robust​
  • Zest from 1 medium orange​
  • 3 oz dried cranberries​
  • 4 tablespoons + 1 tablespoon melted unsalted butter​
  • 1 tablespoon granulated maple sugar​

INSTRUCTIONS

  1. Preheat the oven to 375°F. Lightly spray a 12-inch cast iron skillet with non-stick spray.
  2. In a bowl, combine flour, baking powder, baking soda, and salt. Stir in eggs.
  3. In a separate bowl, stir together buttermilk, orange rind, and maple syrup.
  4. Slowly add wet ingredients to dry ingredients and mix until incorporated. Stir in cherries and 4 tablespoons melted butter.
  5. Press dough into the prepared skillet. Brush the top of the bread with extra butter and sprinkle with maple sugar.
  6. Bake bread for 30 minutes or just until golden brown.
  7. Let cool and enjoy!
