Maple Roasted Carrot Soup

How’s Maple Roasted Curried Carrot Coconut Soup for a tongue twister? Despite its elaborate title, this soup is not all that complicated to make. And while it’s simple, it’s not boring. End-of-winter local carrots skew sweet – in an earthy way – while curry powder imparts a warm spice. Maple syrup adds a rich undertone. This entanglement of flavors makes for a soup you’ll want to savor and slurp.

Enjoy as is or with accoutrements. Serve with a heap of rice, cilantro and fresh jalapenos or forgo the fork and soak the soup up with bread.

When it comes to roasting the carrots, we used Grade A Amber Rich for its classic maple flavor. It isn’t too too sweet and it’s rich profile allows the natural brightness of carrots to shine. Using Grade A Dark Robust would work just as well here, perhaps adding a bit more of a caramelized flavor to the roasted carrots.

INGREDIENTS

  • 2 lbs carrots, peeled and quartered
  • 3 tablespoons unsalted butter, divided
  • 2 tablespoons maple syrup
  • 1 1/4 teaspoon kosher salt, divided, plus more to taste
  • 1 medium onion, diced, about 2 cups
  • 3/4″ piece of fresh ginger, minced
  • 3 teaspoons curry powder
  • Freshly cracked pepper, to taste
  • 1 large garlic clove, minced
  • 4 cups vegetable or chicken stock
  • 1 13.5oz can unsweetened coconut milk
  • Juice from 1 lime

To serve (optional)

  • Rice
  • Cilantro
  • Jalapeno peppers, sliced thin

 

INSTRUCTIONS

  1. Pre-heat the oven to 400F.
  2. Place the carrots on a sheet pan fitted with parchment paper. Melt 2 tablespoons of butter and pour it along with the maple syrup over the carrots, followed by a 1/4 teaspoon of kosher salt. Toss until the carrots are coated and arrange into an even layer across the pan. Bake for 40-45 minutes until the carrots can be easily pierced with a fork.
  3. As the carrots near the end of their roasting time, heat the remaining tablespoon of butter in a heavy bottom pot over medium-high heat. Add the diced onion and minced ginger. Season with the curry powder, a sprinkle of salt and a few cracks of pepper. Cook, stirring occasionally, until the onions are soft, about 5-7 minutes. Stir in the garlic and cook for 1 minute until aromatic.
  4. Carefully transfer the roasted carrots to the pot and stir. Pour in the vegetable stock and coconut milk, making sure everything is submerged under the liquid. Stir in a teaspoon of salt. Bring to a boil and then lower heat to medium-low, maintaining a simmer. Cook for 15 minutes, allowing the flavors to meld.
  5. Remove the pot from the heat and blend the soup with an immersion blender, careful not to spit any hot soup up! Alternatively, puree the soup in a blender, in batches, careful to avoid any hot spills! The soup does not have to be perfectly blended. Bits of carrot will add texture to the spoonful. Taste and adjust seasoning as needed.
  6. Stir in the lime juice.
  7. Serve over rice with jalapenos and cilantro, or simply enjoy with a side of bread. Store leftovers in an air tight container in the fridge for 3 days.
