What’s better than lemonade on a scorching summer day? A frozen raspberry lemonade! Closer to a smoothie in texture, you’ll savor each sip of this pink drink. It’s tartness is balanced by sweetness imparted by the natural addition of maple sugar. This recipe makes enough for one large glass, or two smaller glasses but you can double the recipe for a bigger batch!

INGREDIENTS

  • 2 cups fresh raspberries
  • Juice from 4 lemons, about 3/4 cups
  • Zest from 1 lemon
  • 1/2 cup maple sugar
  • 1 1/2 – 2 cups ice cubes

INSTRUCTIONS

  1. Blend the raspberries until they’re liquified, about 15 seconds. Strain the raspberry liquid into a small bowl to remove the seeds. (This step is optional if you don’t mind raspberry seeds in your cup!)
  2. If you strained the raspberry seeds, scrape the liquid back into the blender. Add the lemon juice, lemon zest, maple sugar and ice cubes. Blend until it’s come together in a refreshingly tart drink, about 30 seconds.
  3. Pour into your vessel of choice and enjoy in front of a fan or in the shade!
