These one bite morsels are so good you’ll want to eat them alone right off the skewer! However, we do recommend serving them over fresh arugula with a generous drizzle of pure maple syrup.

INGREDIENTS

  • 1 pound of scallops​
  • 1/4 cup olive oil​
  • 2 tablespoons cilantro​
  • 1 tablespoons crushed juniper berries​
  • 2 tablespoons cider vinegar​
  • 1 teaspoon lemon zest​
  • 1 clove garlic, minced​

INSTRUCTIONS

  1. Rinse and dry scallops.
  2. Combine marinade ingredients together in a ziplock bag – oil, cilantro, vinegar, lemon peel and garlic.
  3. Add scallops to ziplock bag and refrigerate for at least two hours.
  4. Drain scallops and thread onto skewers.
  5. Cook on a grill or grill pan for 6 to 8 minutes.
  6. Serve with arugula and a drizzle of maple.
