Cheddar Jalapeno Pancakes

Pancakes can be savory too. And when they are, they can still be enjoyed with pure maple syrup! In fact, the melty bits of cheddar cheese that crisp the edges of these pancakes will have you wondering if you should pour maple syrup onto slices of cheese. (We encourage you to do so.) These Jalapeno Cheddar pancakes may be your new favorite breakfast.

Slide your blueberries and chocolate chips aside. Bacon, jalapeno and cheddar are pancake mix ins for those looking to mix things up. The trinity of savory fillings, together they add a salty element that bites back (but in a good way).

Pure maple syrup proves here that it can seamlessly makes the transition from sweet to savory. This wholesome elixir is not simply a sweetener. It’s a flavor enhancer and its robust taste adds a welcomed dimension to this otherwise salty-spicy fluffy cake.

The best part about these pancakes is that they’re ready in no time. With an already made buttermilk pancake mix, all you need to do is add a few ingredients and cook!

INGREDIENTS

  • 1 cup Buttermilk Pancake mix
  • 1 egg
  • 2/3 milk
  • 1 jalapeno (about 2 tablespoons), seeds removed, chopped
  • 1 cup shredded cheddar cheese
  • 4 slices of well done bacon, chopped
  • Butter, for greasing the skillet
  • Maple syrup, to serve
  • Sour cream, to serve (optional)

 

INSTRUCTIONS

  1. In a medium mixing bowl, whisk the pancake mix, egg and milk together. Add the jalapeno, cheese and bacon bits. Stir them in with a wooden spoon or rubber spatula until totally incorporated into the batter.
  2. Pre-heat a greased skillet over medium-high heat.
  3. Add 1/3 cupfuls into the greased skillet. Don’t overcrowd them. Cook until bubbles appear and then flip, cooking for a minute more.
  4. Continue cooking pancakes, lowering the heat a bit and greasing the pan with a small pat of butter between batches.
  5. Enjoy with maple syrup and sour cream!
