Fall Crisp

The consequence of apple picking is having pounds upon pounds of fruit to get through. An apple a day won’t dwindle your haul, but an apple crisp will take about 3 pounds off your counter.

The recipe is simple and delicious. Spiced apples soften and bake under a crust of crumbly streusel. Because we appreciate a maple sugar sweetened streusel, we made sure there was a lot of it for this apple crisp recipe. No bite is without it.

Enjoy scoops of maple apple crisp with dollops of maple whipped cream!

INGREDIENTS

  • 3 lbs McIntosh apples, peeled and slice
  • 2 tablespoons lemon juice
  • 1/4 cup maple sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla bean paste

For the streusel

  • 3/4 cup all purpose flour
  • 1/2 cup maple sugar
  • 1/2 cup old fashioned oats
  • 1/2 teaspoon salt
  • 8 tablespoons (1 stick) unsalted butter, cold and cubed

INSTRUCTIONS

  1. Pre-heat the oven to 350F.
  2. Butter an 11 x 7 x 2 oval baking dish and set aside.
  3. Toss the apple slices in a bowl with the lemon juice, maple sugar, cinnamon, pumpkin pie spice and vanilla bean paste. Stir to coat. Pour the apples into the buttered dish.
  4. To make the streusel, mix the flour, maple sugar, oats and salt in a medium bowl. Work the butter in with your hands, crumbling it across your fingers until the butter is broken down into the size of peas and the mixture resembles wet sand. Crumble the streusel over the apples and bake for 60 minutes, until juices are bubbling. Allow the crisp to cool slightly and serve with ice cream or maple whipped cream.
