Maple Ginger Roasted Strawberry Ice Cream

Roasting the strawberries and adding maple makes this strawberry ice cream extra special!

INGREDIENTS

  • 1 pint fresh strawberries, hulled and sliced in half​
  • 1/4 cup Sweet Ginger Infused Maple Syrup
  • 3 tablespoons apple cider vinegar​
  • 1 teaspoon pure vanilla extract​
  • 2 cans full fat coconut milk (chilled overnight)​
  • 1/3 cup maple syrup​

INSTRUCTIONS

For the Strawberries:

  1. Preheat oven to 375°F.
  2. Line a small baking dish with parchment paper.
  3. Place strawberries in baking dish.
  4. Combine Sweet Ginger Maple Syrup, apple cider vinegar and vanilla extract in a bowl and mix thoroughly.
  5. Drizzle over the strawberries – be sure the strawberries are well coated – stir if necessary.
  6. Bake for approximately 30 minutes.

For the Ice Cream:

  1. Pour maple ginger strawberries and remaining ingredients into a blender and process until smooth and creamy.
  2. Pour into your ice cream maker bowl and make according to your machine’s instructions.
  3. Alternatively pour into a freezer safe container and allow it to freeze naturally, stirring it every 30 minutes or so for the first few hours.
  4. Serve and enjoy!
