The salty crunch of oats and seeds combined with the caramelized sweetness of dark, robust maple syrup makes it hard to keep your hand out of the granola jar. Make this batch of granola once and set yourself up with a week’s worth of smoothie bowls.

INGREDIENTS

FOR GRANOLA:​

  • 3 cups old-fashioned oats​
  • 3/4 cup pepitas​
  • 3 tablespoons sesame seeds​
  • 1 teaspoon cinnamon​
  • 1/2 teaspoon salt​
  • 1/4 teaspoon ginger​
  • 1/2 cup refined coconut oil, melted​
  • 1/2 cup Dark Robust Maple Syrup​

FOR THE SMOOTHIE:​

  • 1/2 cup frozen raspberries​
  • 1/2 cup frozen blueberries​
  • 2 frozen peach slices​
  • 1/4 cup oat milk​
  • 1/2 cup yogurt​
  • 1 tablespoon maple syrup​

INSTRUCTIONS

  1. Preheat the oven to 300°F, and line a baking sheet with parchment paper.
  2. In a large bowl, combine the oats, pepitas, sesame seeds, cinnamon, ginger and salt. Toss to mix everything together.
  3. In a small bowl, whisk the oil and maple syrup together. Pour the liquid into the large bowl with the oats and toss until everything is coated. Pour the granola mix onto the prepared baking sheet and pat into a flat, even layer.
  4. Bake the granola for 25 minutes, stirring once halfway through baking. The granola will still seem wet but will set as it dries.
  5. Once your granola is cool, store in an airtight mason jar for up to a week. Or enjoy right away over a smoothie bowl.
  6. To prepare your smoothie, combine all ingredients into a blender and mix until smooth. Pour into a bowl and top with fresh granola!

Note: Substitute nuts for the pepitas, if walnuts and almonds are more your flavor.

Substitute flax or chia seeds for sesame seeds.
