The sweetness of maple syrup and heat of harissa combine seamlessly to coat eggs in a layer of flavor. This is the easiest way to pack more punch to your breakfast plate.

INGREDIENTS

  • 2 tablespoons olive oil
  • 2 tablespoons harissa paste
  • 2 tablespoons maple syrup
  • 2-4 eggs
  • Salt, to serve

INSTRUCTIONS

  1. Combine olive oil, harissa and maple syrup in a medium non-stick skillet and heat the mixture over medium-high heat.
  2. Once the maple-harissa mixture has begun to sizzle, crack 2 eggs into the pan. (If you’re using a larger pan, you may be able to fit 4 eggs.)
  3. Allow the eggs to fry, carefully basting the maple-harissa mixture over the eggs. Fry the eggs for 3 minutes for a runnier yolk and 5 minutes for a more medium yolk.
  4. Serve on toast with pickled onions, parsley and feta. Alternatively, serve over a smear of labne or Greek yogurt.
