Maple Mascarpone Mousse with Frozen Shaved Peach

This easy to (literally) whip up dessert emulates a maple creemee and shaved ice at the same time. Maple mascarpone mousse comes together in a silky, stable cream that’s airy yet rich in its flavor. Paired with a squeeze of maple syrup and a frozen peach, a spoonful of these peaches and cream tastes like the ultimate sweet treat.

The viral frozen shaved fruit trend picked up popularity on social media after Frankie Gaw (@littlefatboyfrankie) posted a bowl of shaved strawberries topped with condensed milk, crushed peanuts and black sesame seeds. The simplicity became a sensation.

Another simple sensation? Maple syrup! Though it’s composed of only one ingredient, maple provides a complex flavor profile. Rich, robust, sweet, caramel-y. A pour of maple amplifies desserts whether it’s being directly applied to scoops of ice cream or being worked into a whipped cream.

This recipe calls for both maple syrup and maple sugar. The latter is whisked into a fluffy peak of cream. And the syrup creates a liquid layer of sweetener for the mousse to float upon. We use our new PET Squeeze Bottle to precisely pour how much maple we want in the cup.

INGREDIENTS

  • 200g (about 1 cup) heavy cream
  • 30 g (about 3 tablespoons) maple sugar
  • 100 g (about 1/2 cup) mascarpone
  • Maple syrup, to serve
  • 1 frozen peach

INSTRUCTIONS

  1. Combine the heavy cream and maple sugar in a small mixing bowl and whip with a hand mixer (or whisk if you have the arm strength!) until stiff peaks just begin to form, about 3 minutes on medium speed.
  2. Fold in the mascarpone with a spatula or wooden spoon. The mascarpone will make the whip extra creamy, helping the whipped cream keep its shape without deflating it for a mousse-y experience.
  3. Squeeze pure maple syrup into small serving bowls or dishes. Spoon the maple mascarpone mousse over the maple. Finish it off by microplaning the frozen peach into a mound over the mousse. Enjoy the simplicity!
