INGREDIENTS

  • 1 oz light rum (I like Dunc Mills Elderflower Rum)​
  • 1 lime, juiced​
  • 1 oz pure maple syrup – preferably Amber Rich​
  • 3 oz club soda​
  • 6-12 mint leaves​
  • Ice cubes​

INSTRUCTIONS

  1. Place the mint, maple syrup and lime juice in the bottom of the highball glass. Crush well – if you don’t have a muddler, a spoon will do.
  2. Add ice, rum and club soda.
  3. Stir to combine.
  4. Garnish with lime and mint.
