Maple Parfait with Puffed Rice Granola

Parfaits are a delicious choice for breakfast and are so easy to assemble they rarely need a recipe. Simply layer granola, fresh fruit and yogurt together for a balanced spoonful. We paired this parfait with a puffed rice granola tossed in olive oil and maple syrup to achieve a savory, sweet and salty bite. Add nuts and seeds for extra crunch!

For the Granola

  • 3 cups old fashioned oats
  • 1 1/2 cups puffed rice
  • 3 tablespoons sesame seeds
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup high quality olive oil
  • 1/2 cup pure maple syrup

For the Parfait

  • Maple yogurt
  • In season fruit
  • Maple syrup


  1. Pre-heat the oven to 350F.
  2. In a large mixing bowl, combine the oats, puffed rice, sesame seeds, cinnamon and salt. Stir to combine.
  3. Add the good quality olive oil and maple syrup. Stir to coat the oats.
  4. Spread out on a large rimmed baking sheet fitted with parchment paper.
  5. Bake for 30 minutes, stirring halfway through. If you like your granola a bit toastier, bake for 5 minutes more.
  6. Allow the granola to cool. Store in an air tight container.
  7. Once the granola has cooled, stir to break into chunks. Arrange your parfaits! To a cup, add a dollop of maple yogurt, followed by layers of granola and fresh fruit. (We used winter citrus!) Enjoy with a splash of pure maple syrup!
