Maple Roasted Carrots with Herby Green Sauce, Goat Cheese & Toasted Pepitas

Sometimes you can achieve big flavor with little effort. These carrots are one of those recipes. The carrots, which only need to be sliced and tossed in maple syrup, become slightly caramelized in the oven. The herbaceous, and slightly spicy, green sauce adds a refreshing balance to the carrots and all that’s asked of you is to toss all those ingredients in a blender. You may have to keep a close eye on the pepitas as they toast to keep them from burning, but that effort is worth it when you crunch on this salty reward. Layered together, you present a show stopping dish that didn’t make you break a sweat.

INGREDIENTS

  • 1 1/2 lbs carrot, sliced lengthwise​
  • 2 tablespoons olive oil​
  • 1 tablespoon maple syrup​
  • 1/2 cup pepitas, or almonds, toasted​
  • Salt and pepper, to taste​
  • Paprika, to taste (optional)​
  • 3/4 cups crumbled goat cheese​

FOR THE SAUCE:​

  • 1 jalapeño, chopped and seeded (keep seeds if you like heat)​
  • 3 tablespoons red wine vinegar​
  • 3 garlic cloves​
  • 1 tablespoon lime juice​
  • 1 tablespoon chopped rosemary​
  • 1 tablespoon chopped sage​
  • 1/2 cup extra virgin olive oil​
  • 1 teaspoon maple syrup​
  • 1/2 teaspoon salt​

INSTRUCTIONS

  1. Preheat the oven to 450°F.
  2. Place the carrots on a rimmed baking sheet and toss in the olive oil and maple syrup. Season with salt and pepper, to taste.
  3. Bake until the carrots are fork tender and beginning to turn a caramelized golden-brown, about 25-30 minutes.
  4. Meanwhile, toast the pepitas in a cast iron skillet over medium heat until they begin to brown and sizzle, about 5-7 minutes. Transfer the pepitas to a bowl and toss in salt, pepper and paprika.
  5. To make the sauce, add all the ingredients to a blender. Blend and taste. Adjust seasoning as necessary!
  6. Once the carrots have caramelized, allow them to cool slightly before plating on a platter and topping with the herby sauce, toasted pepitas and goat cheese.
