Easy Peach Cobbler

Late summer welcomes peaches to the produce section. The fruit famously leaks its juicy nectar when ripe, and so it’s favorably chosen to be devoured over the kitchen sink. Enticing as a fresh fruit, it also delivers an enriching juiciness to baked goods. Case and point: this maple roasted peach cobbler. The maple baked peaches create a rich pool of sweet juices for the maple sugar sweetened drop biscuits that float atop to absorb. It’s a soft, cakey, sweet bite worth turning the oven on in August for.

INGREDIENTS

For the maple roasted peaches

  • About 2 pounds firm but ripe peaches (5 medium peaches), pitted and cubed
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons Grade A Dark Robust maple syrup
  • 1/8 teaspoon kosher salt
  • 3/4 teaspoons corn starch

For the drop biscuits

  • 1 1/2 cups all-purpose flour
  • 1/2 cup maple sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • Zest from 1 lemon
  • 1 stick butter, cold and cubed
  • 3/4 cups whole milk
  • Ice cream or maple whipped cream, to serve

INSTRUCTIONS

  1. Pre-heat the oven to 400F.
  2. Place the peaches in a 1.8L casserole dish and toss them in the melted butter, maple syrup and salt until all peach pieces are coated in a shimmery, maple shine. Bake for 15 minutes, until the peaches have softened and are beginning to sizzle in their juices.
  3. Meanwhile, prepare the drop biscuits. In a large mixing bowl, whisk together the flour, maple sugar, baking powder, salt and lemon zest. Toss in the cubed, cold butter and cut into the flour with a pastry blender or your hands, breaking the butter down with your fingers and working it gently into the dough until the pieces are pea sized. Pour in the milk and stir until no dry spots remain, careful to not overwork the dough to avoid gluten development.
  4. Once the peaches have roasted, scoop 1/3 cup of the drop biscuit batter and plop it on top of the peaches. Keep scooping batter over the peaches until they’re blanketed in biscuits. Bake the cobbler for 25-30 minutes more until the biscuits are done. When a toothpick is inserted into the center of a biscuit, it should come out clean.
  5. Allow the cobbler to cool for at least 30 minutes and then serve with maple whipped cream or ice cream.
