Sweetbreads can be some of the most unhealthy foods you can make – but not this recipe! We’ve taken out the refined sugar and replaced it with nutrient-rich, pure maple syrup!

INGREDIENTS

  • 1 2/3 cups all-purpose flour or whole white flour​
  • 1 teaspoon baking soda​
  • 1 teaspoon cinnamon​
  • 1/2 teaspoon salt​
  • 4 very ripe bananas​
  • 2 eggs​
  • 1/3 cup maple syrup, Dark Robust​
  • 2 tablespoons sour cream​
  • 1/2 cup vegetable oil​

INSTRUCTIONS

  1. Preheat oven to 350°F. Line a standard loaf pan with parchment paper and grease well.
  2. Mash the bananas in a small bowl. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set both bowls aside.
  3. In the bowl of a stand mixer, whisk the eggs and maple syrup for 10 minutes (yes, 10 minutes!) The egg mixture will grow in volume. Drizzle in oil, Stir in bananas and sour cream, and then gently fold in flour. Do not over mix. Spread into prepared pan.
  4. Bake in preheated oven for 50-60 minutes, or until a toothpick inserted in the middle comes out clean. Allow cooling for 20 minutes before removing from pan. Enjoy!
