INGREDIENTS

  • 1 cup heavy cream​
  • 5 tablespoons unsalted butter, cubed​
  • 2 tablespoons Vermont Whiskey​
  • 1/2 teaspoon salt​
  • 1 1/2 cups granulated maple sugar​

INSTRUCTIONS

  1. Line an 8-inch baking dish with parchment paper. Combine heavy cream, butter, whiskey, and salt in a heavy saucepan over medium-high heat. Once mixture boils, immediately add maple sugar and heat till 250°F. Stir just at the beginning with a heatproof spatula; stop stirring once sugar begins to melt.
  2. Once the mixture reaches 250°F, CAREFULLY pour the caramel into prepared pan and let cool at room temperature for 30 minutes. Place uncovered pan in the refrigerator and cool for 2 hours or more to set.
  3. Lift parchment to remove caramel from pan and place on a cutting board. Cut to desired size and shape with sharp knife.
  4. Individually wrap candies in wax or parchment paper.
