A one pan dinner eliminates excess dishes so you can enjoy dinner without a full sink of looming prep bowls. This salmon wows with umami and pops with hints of sweetness for a meal that will leave you full, but not the dishwasher.

INGREDIENTS

FOR THE FISH:​

  • 3-4 filets of salmon or trout, deboned​
  • 1 tablespoon maple sugar​
  • 1 tablespoon soy sauce​
  • 2 garlic cloves, minced​
  • 2 teaspoons rice wine vinegar​
  • Salt, pepper and red chili flakes, to taste​

FOR THE VEGETABLES:​

  • 1/2 pound of French or green beans​
  • 1 head of broccoli​
  • 3 spring onions, sliced​
  • 2 tablespoons olive oil​
  • 1/4 teaspoon sesame oil​
  • 1 garlic clove, minced​
  • Salt, pepper and red chili flakes, to taste​

INSTRUCTIONS

  1. Preheat the oven to 400°F.
  2. In a large bowl, whisk the maple sugar, soy sauce, garlic and rice wine vinegar together.
  3. Season the salmon with salt, pepper and red chili flakes, and place the fish filets in the bowl, massaging the marinade into the fish. Allow the fish to sit in the marinade while the oven preheats.
  4. Line a baking sheet with parchment paper. Toss the beans, broccoli, and spring onions in the olive oil, sesame oil and garlic. Season with salt, pepper and red chili flakes and toss again, making sure to coat the vegetables evenly.
  5. Make a nest in the middle of the vegetables and place the fish filets in the middle of the pan. Pour the remaining marinade and top of the fish.
  6. Bake for 15 minutes, until the fish and vegetables are cooked through.
  7. Serve with rice, grains, potatoes, or eat as is!
