Pumpkin Spice Cake with Maple Buttercream

The changing foliage is a sign of the shifting seasons and so is the debut of the first pumpkin spice pastry. Is it truly fall until you’ve had your first taste of pumpkin spice? We’d argue “not really” and so we got to making this Pumpkin Spice Cake with Maple Buttercream as soon as possible to make fall official.

Maple and pumpkin are, unofficially, the flavors of autumn. They’re both rich with a flavorful depth that reflects the vibrant colors and cozy feel of the time of year. Adding warm spices and sweetness to your oatmeal, your coffee, your baking projects just makes sense.

This Pumpkin Spice Cake will yield a light, spongy, delicate slice that’s packed with pumpkin’s earthy characteristics. Sealed with a fluffy buttercream, it’s flavored with real maple syrup for a sweet and robust finish. Sprinkling it with cinnamon and maple sugar is an optional detail, and mostly for presentation’s sake.

INGREDIENTS

For the cake

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 4 large eggs, at room temperature
  • 1 cup maple sugar
  • 1/2 cup light brown sugar
  • 1/2 cup vegetable oil
  • 1/2 cup maple yogurt
  • 1 15 oz can pumpkin puree

For the buttercream

  • 2 sticks unsalted butter, at room temperature
  • 4 cups powdered sugar, sifted
  • 3 tablespoons maple syrup
  • 1 tablespoon + 1 teaspoon milk
  • 1/4 teaspoon kosher salt

Optional

  • Cinnamon and maple sugar to sift

INSTRUCTIONS

  1. Pre-heat the oven to 350F. Fit a 9×12 sheet cake pan with parchment paper.
  2. In a small mixing bowl, whisk the flours, baking powder, baking soda, salt, pumpkin pie spice and cinnamon together.
  3. In a large mixing bowl, whisk the eggs with the maple sugar and brown sugar until frothy, about 1 minute. Add the vegetable oil, maple yogurt and pumpkin puree, whisking to combine.
  4. Add the dry ingredients to the liquid ingredients and whisk together to break up the flour mixture. We want to be careful to not tempt any gluten development so once there are no lumps of flour, finish blending with a rubber spatula until the batter is smooth.
  5. Pour into the cake pan, smoothing the top and banging it (hard enough but not aggressively) once or twice on the counter top to eliminate air bubbles. Bake for 30-35 minutes, until a toothpick inserted in the middle of the cake comes out clean.
  6. Allow the cake to cool completely on a cooling rack before icing.
  7. Speaking of icing: let’s make it! In the bowl of a stand mixer fitted with a paddle attachment, add the softened room temperature butter. Whip it on medium speed until it’s light and fluffy, about 2-3 minutes, stopping to scrape the sides of the bowl.
  8. Add the powdered sugar, maple, milk and salt and mix together on a low speed until most of the powdered sugar has been incorporated. Then, return to a medium speed and whip until fluffy, about 4-5 minutes more. Taste and adjust maple flavor as necessary.
  9. Once the cake has cooled, swoop the buttercream over the cake. Sprinkle with a blend of ground cinnamon and maple sugar, if you’d like. Slice and enjoy!
