Vegan Blueberry Muffins

When they’re in season we’re snacking on them, swirling them into our yogurt bowls, plopping them into buttermilk pancakes, and dumping them into muffin batter. These fresh fruity gems turn jammy in the oven. With a soft, jammy base and a crumbly maple sugar based crumb topping a bite of vegan blueberry muffins has it all.

These muffins take less than 30 minutes to bake and only require one bowl to whip up. Share them with the whole family, pack them for lunch or enjoy as dessert. INGREDIENTS

  • 2 1/3 cups all-purpose flour
  • 3/4 cups maple sugar
  • 3/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • Zest from 1 lemon
  • 1 cup unsweetened coconut yogurt
  • 1/2 cup neutral vegetable oil
  • 1 tablespoon oat milk
  • 1 teaspoon maple syrup
  • 1 1/2 cups fresh blueberries

For the Crumble Top

  • 5 tablespoons all-purpose flour
  • 1/4 cup maple sugar
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • 2 tablespoons vegan butter

INSTRUCTIONS

  1. Pre-heat the oven to 350F. Prepare 2 12 cup muffin tins with muffin liners.
  2. In a mixing bowl, whisk the flour, maple sugar, salt, baking powder, baking soda and lemon zest together.
  3. Pour in the coconut yogurt, vegetable oil, oat milk and maple syrup, stirring with a rubber spatula until a batter comes together. Fold in the blueberries. (It’s okay if a few blueberries get squished in the process!)
  4. In a small bowl, whisk the flour, sugar, cinnamon and salt together with a fork. Add the vegan butter and crumble with clean hands until the mixture is broken down and looks a bit like wet sand.
  5. Spoon the batter into the muffin tins. Depending on how much batter you use per muffin liner, you should be able to make around 14-16 muffins. Sprinkle the crumble over the muffins.
  6. Bake for 23-25 minutes until a toothpick inserted into the center of a muffin comes out clean. The muffin tops won’t be too browned. Allow the muffins to cool for 20-30 minutes before eating!
