  • 1 sheet puff pastry, thawed
  • About 6 tablespoons pure maple syrup, divided
  • 1 tart apple, peeled and thinly sliced
  • 1 cup grated sharp Vermont cheddar cheese
  • 1 small egg, whisked
  • Maple sugar, to sprinkle
  • Flakey sea salt, to sprinkle

  1. Pre-heat the oven to 400F.
  2. On a sheet of parchment paper, roll a thawed puff pastry into a 10×10 square. The puff pastry should be pliable but still cold. Slice the pastry into 6 rectangles.
  3. Fit a baking sheet with the parchment paper. Squeeze about 1 tablespoon of maple syrup onto a section of the parchment paper. Repeat 5 more times, spacing the squeeze of maple syrup out generously to ensure there’s enough room for each pastry to fit.
  4. Layer the thinly sliced apples over the maple syrup, followed by a heap of cheese. Repeat.
  5. Place the puff pastry rectangles over the fruit and cheese. Brush with the egg wash and sprinkle with maple sugar and flakey sea salt.
  6. Bake for 25-30 minutes, until the puff pastry is browned. Allow the tarts to cool slightly before serving. Enjoy with maple gelato!
