Maple Yogurt Cake with Plums & Poppyseed Streusel

This one bowl wonder won’t make a mess but will make you want to start indulging in tea time. This coffee cake like treat doesn’t have to be reserved for dessert. Its fruit forward and maple flavors make it irresistible to enjoy with morning coffee or an afternoon tea. If you don’t have plums, use peaches or cherries!

INGREDIENTS

FOR THE STREUSEL:​

  • 2 tablespoons brown sugar​
  • 1 tablespoon maple sugar​
  • 1/8 teaspoon salt​
  • 1/8 teaspoon salt​
  • 1 teaspoon poppy seeds​
  • 2 tablespoons butter, melted​
  • 5 tablespoons flour​

FOR THE CAKE:​

  • 3/4 cup maple sugar​
  • Zest from 1 lemon​
  • 2 large eggs​
  • 1/2 cup maple yogurt​
  • 1 1/4 cups flour​
  • 1 teaspoon baking powder​
  • 1/2 teaspoon baking soda​
  • 1/2 teaspoon salt​
  • 1/2 cup vegetable oil​
  • 3-4 plums, halved and quartered​

INSTRUCTIONS

  1. Preheat the oven to 350°F.
  2. In a small bowl, make the streusel. With a fork, mix together the brown sugar, maple sugar, poppyseeds and salt. Whisk in the butter. Add the flour and stir with your fork until clumps form.
  3. Prepare a 7″ or 8″ cake pan by lightly greasing it with vegetable oil and fitting it with parchment paper.
  4. In a medium bowl, make the cake! Mix the lemon zest into the maple sugar. Add the eggs and whisk until frothy, about 1 minute. Whisk in the yogurt until thoroughly combined.
  5. Whisk in the flour, baking powder, baking soda and salt.
  6. Mix in the vegetable oil. The batter may separate, but it will come back together as you continue whisking.
  7. Top the cake with plum slices and the streusel!
  8. Bake for 40 minutes. Allow the cake to cool in the pan for 10 minutes!
  9. Release the cake onto a cooling rack and allow it to cool before slicing in.
