Loaded Sweet Potato with Pure Maple Butter and Cob Smoked Bacon

Loaded baked sweet potato with pure maple

A baked sweet potato is already pretty irresistible, but this loaded version takes this fall comfort food to a whole new level with the addition of Vermont’s finest flavors.

This fluffy, baked sweet potato first gets a rich, maple-forward upgrade from a spoonful pure maple butter. Luxurious smooth, it melts right into the warm root vegetable. Once mashed in, the potatoes are piled high with crisp Dakin Farm’s cob-smoked bacon coated with Vermont Maple Syrup, juicy apples, Dakin Farm’s sharp cheddar cheese, and fresh chives. Sweet, fresh, crisp, salty, smoky, and tangy. Every bite is a kaleidoscope of flavors.

This recipe is hearty enough for a simple supper but easy enough for lunch. All ingredients combined, it’s a sweet-and-savory celebration of the tastes Vermont is known for.

INSTRUCTIONS

Pre-heat the oven to 375F.

Arrange an oven-safe wired baking rack over a sheet pan. Pierce the sweet potatoes with a fork and rub them with olive oil. Place on the rack and bake for 1 hour until the skins are crisped and the insides are softened.

While the sweet potatoes bake, cook the bacon, starting in a cool pan, until crispy. Transfer to a paper towel lined plate and crumble into bits once cooled enough to handle.

Let the baked sweet potatoes cool for 10 minutes, then slice almost all the way through them, opening the halves like a book. Add a tablespoon of pure maple butter to each potato and mash it in with a fork. Taste and add more pure maple butter, if you’d like.

Cover sweet potatoes with shredded cheddar cheese, apple slices, bacon bits and chives. Enjoy!
