Maple roasted carrots bring both flavor and color to this favored dip. Creamy, a little sweet and sort-of spicy, this hummus will brighten up the dinner table after a long winter. Hummus is easy to make and is the perfect mid-afternoon snack, dinner dip or spread for vegetable heavy sandwiches.

  • 1 lb carrots, cut in half lengthwise and then crosswise​
  • 3 tablespoons olive oil, divided, plus more for drizzling​
  • 1 tablespoon maple syrup​
  • 1 small head of garlic​
  • 3/4 teaspoons Maple Sugar Seasoning, divided​
  • 2 tablespoons lemon juice​
  • 1/4 cup tahini​
  • 1 (15oz) can chickpeas (garbanzo beans), drained and skins removed​
  • 1/2 teaspoon kosher salt, plus more to taste​
  • 1 teaspoon cumin​
  • 1 1/2 tablespoons water​


  1. Preheat the oven to 400°F.
  2. On a rimmed baking sheet toss the carrots in 1 tablespoon of olive oil, the maple syrup, 1/4 teaspoon of Maple Sugar Seasoning and a sprinkle of salt.
  3. Slice about 1/4″ off of the top of the garlic, just so the tops of the garlic cloves are exposed. Rub off as much of the garlic paper as possible. Place the garlic head in aluminum foil and drizzle a bit of olive oil over the garlic. Sprinkle with a pinch of salt. Wrap the aluminum foil around the garlic and place on the baking sheet with the carrots.
  4. Place in the oven and roast for 30 minutes.
  5. Once the carrots are soft enough to pierce with a fork, carefully transfer them to a blender or food processor using a spatula. Roast the garlic for 10 more minutes.
  6. Blend the carrots, adding a splash of water if needed, until they’ve broken down. This will make blending everything together a bit easier.
  7. Add the remaining 1/2 teaspoon of maple sugar seasoning, remaining 1/2 teaspoon of Maple Sugar Seasoning, remaining 2 tablespoons of olive oil, lemon juice, tahini, chickpeas, salt and cumin to the blender or food processor with the carrots. Blend until everything has incorporated and is creamy. Add the 1/12 tablespoons of water to get a smoother consistency.
  8. Serve with fresh vegetables, pita chips, spicy olive oil and a sprinkle of parsley if desired!
