INGREDIENTS

  • 1/2 cup pearl barley​
  • 1/2 cup heritage black rice​
  • 2 tablespoons olive oil​
  • 3 cloves garlic, crushed and peeled​
  • 2 tablespoons pine nuts​
  • 2 cups baby spinach, roughly chopped​
  • 1/2 pint of cherry or grape tomatoes, halved​
  • 1/2 cup chives, chopped​
  • Juice of 2 limes​
  • 1/4 cup arugula, chopped finely​
  • 1 cup feta cheese, crumbled​
  • 1 cup cucumber, finely diced​
  • 1 red onion, diced​
  • 1/3 cup olive oil​
  • 3 tablespoons red wine vinegar​
  • 1/4 cup pure maple syrup​
  • 1/4 cup pitted kalamata olives, chopped​
  • Salt and freshly ground black pepper to taste​

INSTRUCTIONS

  1. Cook the pearl barley and black rice in separate pots according to package instructions. Strain and set aside.
  2. Saute garlic and pine nuts.
  3. Add spinach to wilt.
  4. In a large bowl, combine olive oil, the pearl barley, black rice, spinach mixture, tomatoes, chives, lime juice, arugula, feta, cucumber, onion, vinegar, maple syrup and olives.
  5. Season with salt and pepper.
