Get a taste of pumpkin pie for breakfast. These oats are cooked in pumpkin puree and its beloved spice blend for an aromatic and deeply satisfying bowl of breakfast. Top with crisp apples to add a burst of freshness to each bite. Add warm, toasty nuts or seeds to your bowl for a crunch. And, of course, to sweeten it all up, swirl a dollop or two of pure maple butter in your oatmeal for a meal bursting with fall flavors. We’ll be eating this until Christmas!

INGREDIENTS

  • 3/4 cups old fashioned oats​
  • 1 cup oat milk​
  • 1/4 cup pure pumpkin puree​
  • 1 teaspoon pumpkin pie spice​
  • Pinch of salt​
  • 1/2 tart apple, thinly sliced​
  • Toasted nuts or pepitas​
  • Pure Maple Butter

INSTRUCTIONS

  1. In a medium saucepan, combine the oasts, milk, pumpkin puree, pumpkin pie spice and salt. Stir together over medium-high heat.
  2. Bring the oatmeal to a simmer, stirring occasionally until the oatmeal thickens slightly, about 4-5 minutes.
  3. Serve with apples, toasted nuts or pepitas (preferably tossed in cinnamon and a sprinkle of maple sugar), and a dollop of maple butter.
