INGREDIENTS

  • 1 cup Butternut Mountain Farm Pancake Mix​
  • 3/4 cups water​
  • 1 egg​
  • 1 1/2 tablespoons olive oil​
  • 1 teaspoon minced garlic​
  • 3/4 cups chopped baby spinach​
  • 1/3 cups freshly grated cheddar cheese​

INSTRUCTIONS

  1. Preheat and generously grease the waffle iron.
  2. Stir the pancake mix and water together. Then whisk in the egg, oil and garlic. Whisk until you no longer see dry flour. Do not over-mix.
  3. Fold in the spinach and cheese.
  4. Let sit for 2-3 minutes, then pour 1/2 of the mixture into your waffle maker and lightly spread if needed.
  5. Cook on medium for a lightly crisped exterior.
  6. Remove and serve immediately with desired toppings.
