Strawberry Banana Ice “Cream”

Sweetened with maple syrup this strawberry banana ice “cream” is our new favorite summer indulgence. It’s creamy, sweet and you only need 5 ingredients to pull it together. Enjoy a cup topped with crushed maple candy or a generous squeeze of pure maple syrup!

Prep time

Cook time

  • 2 bananas, peeled and chopped
  • 2 cups fresh strawberries, hulled
  • Zest from 1 lemon
  • 1/4 cup maple syrup
  • 1/4 cup full fat oat milk or coconut milk
  • Crushed maple candy (optional)

  1. Line a baking sheet with parchment paper and spread the banana and strawberry pieces out. Place in the freezer and freeze overnight.
  2. Transfer the fruit and lemon zest to the bowl of a food processor and chop until the banana and strawberry are minced.
  3. With the food processor running on purée, add the maple syrup and oat milk. Purée until the fruit has broken down and looks like ice cream. You may have to stop and wipe down the sides of the bowl with a rubber spatula to ensure all the fruit is being incorporated.
  4. Pour the “ice cream” into a loaf pan and freeze for at least an hour before scooping and enjoying with crushed maple candy!
