While favored in baking for their sweet properties, maple and strawberries both have a savory side. As long as fresh strawberries are in season we tend to blend them with a touch of maple mustard for a vibrant salad dressing. We enjoy this poured over a plate of arugula, grapes, radishes and grilled halloumi.

INGREDIENTS

  • 1 1/2 cups strawberries, hulled and sliced in half
  • 1 small shallot, roughly chopped, about 1/3 cup
  • 3 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • 1 teaspoon Sweet Maple Mustard
  • 1/4 teaspoon salt
  • Freshly cracked pepper, to taste
  • 1/2 cup extra-virgin olive oil

INSTRUCTIONS

  1. Add all the ingredients to a blender. Blend for 30 seconds, or until smooth.
  2. Adjust seasonings to taste. Enjoy!

NOTE: To add extra flavor, consider adding a chipped long red hot pepper or jalapeño.
