We love waffles. Their pattern provides the perfect crevices to cradle puddles of maple syrup. While you can enjoy this recipe plain, we like to add grated carrots and cinnamon for a little something extra. Spruce up this recipe with chopped walnuts and raisins if desired. These waffles can be served savory, with a fried egg, or extra-sweet, served with cream cheese frosting!

  • 1 cup all-purpose flour
  • 3 tablespoons maple sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1 cup buttermilk
  • 1 large egg
  • 4 tablespoons unsalted butter, melted
  • 2 carrots, grated, about 3/4 cups


  1. In a large mixing bowl, whisk together the flour, maple sugar, baking powder, baking soda, salt, cinnamon, ginger and nutmeg.
  2. In a small bowl, stir the buttermilk, egg and butter together.
  3. Pour the buttermilk mixture into the flour. Fold in the grated carrots. (This recipe can also be made without carrots if you’re looking for a carrot-less waffle!).
  4. Heat your waffle iron per the iron’s instruction. We find it easiest to coat it with vegetable oil using a pastry brush. Ladle the batter into the iron and cook until browned. The waffle should remove from the iron easily when done. (We found that in some waffle irons, we like to cook it for a second round to ensure it’s done.)
  5. Serve with maple syrup and powdered sugar!
