The quickest way to spruce up salads, sandwiches, and other savory servings is by tossing in some quick pickled red onions! Requiring little effort, these pickled onions pack a punchy flavor. Maple syrup helps keep everything balanced.

  • 1 large red onion​
  • 2 cloves garlic, smashed​
  • 1/2 cup + 2 tablespoons red wine vinegar​
  • 1/4 cup maple syrup​
  • 1/4 cup water​
  • 1 teaspoon salt​
  • 1/2 teaspoon coriander seeds​
  • 1 teaspoon black peppercorns​
  • 1/2 teaspoon caraway seeds​
  • 1/2 teaspoon red pepper flakes​
  • 1 bayleaf​


  1. Slice the red onion thinly (very carefully!) using a sharp knife or a mandolin.
  2. Place the onions in a small bowl or mason jar with the 2 cloves of garlic.
  3. Combine red wine vinegar, maple syrup, water, salt, coriander seeds, black peppercorns, caraway seeds, red pepper flakes, and the bay leaf in a small pot. Stir together and bring to a simmer. Heat for 3-5 minutes, stirring occasionally.
  4. Pour the hot liquid over the onions. Stir the onions to submerge them under the pickling liquid.
  5. Cover and let the onions marinate for at least 30 minutes, tossing once or twice to make sure all the onions are coated.
  6. Use immediately or store in the refrigerator for up to one week.
