INGREDIENTS

  • 1 cup rolled oats​
  • 1 cup cashews​
  • 2/3 cup coconut flakes​
  • 1/3 cup almonds​
  • 2 tablespoon chia​
  • 1/3 cup Majool dates​
  • 2/3 cup dried cranberries​
  • 1/3 cup dark chocolate (chips or bar)​
  • 3 tablespoons pure maple syrup​
  • 1 teaspoon vanilla extract​
  • 1 teaspoon cinnamon​

INSTRUCTIONS

  1. Blend oats and cashews until flour like.
  2. Add coconut and almonds and blend until roughly chopped and included – just a couple of pulses.
  3. Add chia, dates, cranberries and chocolate and pulse until roughly incorporated.
  4. Add maple syrup, vanilla extract, and cinnamon.
  5. Blend until the mixture begins to come together and form a clump. You may need to add a table spoon of water if the mixture is very dry.
  6. Roll into bite sized balls.
  7. Place in a sealed container and store in the fridge.
