Roasted garlic will take any ordinary side salad and make it the main course. Roasted in the oven for an hour the garlic caramelizes and takes on a salty-sweet-savory profile thanks to a drizzle of extra virgin olive oil and our Bourbon Barrel Aged Maple Syrup. Pour over a big bowl of fresh greens filled with croutons, apple slices, pomegranate seeds and grilled shrimp!

  • 1 large head of garlic, about 6-8 cloves​
  • 1/3 cup + 1/2 tablespoon extra-virgin olive oil, divided​
  • 1 teaspoon Bourbon Barrel Aged Maple Syrup​
  • 3 teaspoons maple syrup​
  • 1 teaspoon grainy mustard​
  • 2 tablespoons red wine vinegar​
  • Salt & maple pepper, to taste​


  1. Preheat oven to 400°F.
  2. Slice 1/4″ off the top of a large head of garlic. Peel off most of the garlic paper while leaving the head in place.
  3. Fit a shallow, oven safe dish with tin foil. Place the head of garlic in the center and drizzle with the 1/2 tablespoon of olive oil, 1 teaspoon of Bourbon Barrel Aged Maple Syrup, and a pinch of salt. Wrap in the foil and bake for 55-60 minutes until your kitchen is filled with a savory aroma and the garlic is golden and caramelized.
  4. Allow the garlic to cool enough to be able to handle and then squeeze the garlic into a bowl or salad dressing jar.
  5. Add the maple syrup, grainy mustard, red wine vinegar, salt and maple pepper. Mix together until the garlic has broken up and everything is incorporated. As you continue to stir, gradually pour in the olive oil. Keep stirring to emulsify. Adjust seasonings to your taste!
