INGREDIENTS

  • 1 large egg white​
  • 1/2 cup Grade A Dark Robust Maple Syrup​
  • 1/4 cup olive oil​
  • 1 teaspoon vanilla extract​
  • 3 cups old fashioned rolled oats​
  • 2 tablespoons granulated maple sugar​
  • 1 1/2 teaspoon salt​
  • 1 1/2 teaspoon ground ginger​
  • 1/2 cup sliced almonds​
  • 1/2 cup shredded coconut​
  • 1/2 cup golden raisins​
  • 1 tablespoons chia (wheat germ or flax seed could easily be substituted)​

INSTRUCTIONS

  1. Preheat oven to 300°F and line a baking sheet with parchment paper and set aside.
  2. Combine the egg white, maple syrup, olive oil and vanilla in a small bowl.
  3. In a large mixing bowl combine oats, sugar, salt, ginger, almonds, coconut, raisins and seeds (optional).
  4. Add the liquid to the dry ingredients and mix until combined.
  5. Spread evenly across the baking sheet.
  6. Bake for 60 minutes, stirring every 10 to 15 minutes. Remove from oven when golden brown.
  7. Let cool and then store in an airtight container.
  8. Serve with yogurt, fresh fruit and a splash of pure maple syrup.
