Baked Zucchini Fries With Maple Labne Dip

This zucchini has a crisp crust but a tender bite. A lemony labne dip is the perfect counter to the zucchini’s robust crust. Once you pick up one zucchini fry, you won’t want to stop. Prepare as a snack or enjoy as the side to veggie burgers.

INGREDIENTS

  • 3 small zucchinis, about 1 pound
  • 1/2 cup panko or breadcrumbs
  • 1/3 cup freshly grated parmesan
  • 1 tablespoon Maple Sugar Seasoning
  • 1 cup flour, plus more as needed
  • 2 eggs, beaten
  • Salt and pepper, to taste

For the Maple Labne Dip

  • 1/3 cup labne
  • 1/2 teaspoon maple syrup
  • Zest from 1 lemon
  • 2 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes
  • Salt, to taste
  • Fresh chives, to garnish

INSTRUCTIONS

  1. Slice the zucchinis in half. Arrange the zucchini halves on a tea towel. Sprinkle with salt and let the zucchini rest for 20-25 minutes. The salt will pull the moisture out of the zucchini. Pat the zucchini halves dry.
  2. Quarter the zucchini into wedges.
  3. In a wide bowl, combine the panko (or breadcrumbs), parmesan and seasoning. Add salt, to taste. Mix together.
  4. Add flour to a wide bowl. We will dredge the zucchini wedges in this order: flour, eggs, seasoned panko or breadcrumbs.
  5. Pre-heat the oven to 425F.
  6. Fit a rimmed baking sheet with parchment paper.
  7. Begin to dredge the zucchini. Coat the wedges in the flour by rolling it around the bowl, tapping excess flour off. Next, dip the wedges in the beaten eggs allowing the excess egg to drip off. Finally, roll the wedges in panko mixture. (This step can get a little messy, so keep a tea towel near you if your fingers start to get covered in breadcrumbs!)
  8. Bake the zucchini fries for 20-25 minutes, turning the pan halfway through baking.
  9. As the fries bake, prepare the dip. Add all of the dip ingredients except the chives to a small bowl. Stir together until uniform. Garnish the dip with chopped chives.

NOTE: If you can’t find labne, you can use plain Greek yogurt.
