Upgrade your banana pancakes to pan-fried banana pancakes. This easy to achieve treat is an impressive way to jazz up oatmeal, toast or pancakes. We enjoy it over tart yogurt with a side of granola. While we use Bourbon Barrel Aged Maple Syrup for extra dimension, but any maple syrup will work well.

INGREDIENTS

  • 2 ripe bananas, sliced in 1/2″ pieces
  • 1/2 tablespoon unsalted butter
  • 1 teaspoon Bourbon Barrel Aged Maple Syrup
  • 1/4 teaspoon cinnamon
  • Pinch of salt (about 1/8 teaspoon)

INSTRUCTIONS

  1. In a skillet over medium-high heat, add the butter, swirling it around. Once melted, add the maple syrup, cinnamon and salt. Stir together. It should start to bubble a bit.
  2. Add the banana slices and cook until golden, about 3-5 minutes. Flip the bananas with a fork or tong, and cook for 2-3 minutes more, watching to make sure it doesn’t burn.
  3. Remove from heat and enjoy over oatmeal, on toast or atop pancakes!
