INGREDIENTS

  • 1 large, very firm English (seedless) cucumber​
  • 1/4 cup Japanese rice vinegar​
  • 1 teaspoon sesame oil​
  • 2 tablespoons pure maple syrup​
  • 1/4 teaspoon salt​
  • 1 pinch red pepper flakes​

INSTRUCTIONS

  1. Trim the ends off the cucumber and cut in half.
  2. Slice the cucumber lengthwise into thin ribbons using a vegetable peeler.
  3. Place in a mixing bowl.
  4. Combine the vinegar, sesame oil, syrup, and salt.
  5. Pour over the cucumber ribbons and toss well.
  6. Sprinkle red pepper flakes over the salad.
  7. Serve immediately and enjoy!
