INGREDIENTS

  • 4 cups rhubarb, chopped into 1 inch pieces​
  • 1 cup granulated pure maple sugar​
  • 1 whole vanilla bean, split​
  • Pinch of sea salt​
  • Splash of water​

INSTRUCTIONS

  1. Wash and cut rhubarb into 1 inch chunks.
  2. In a medium size sauce pan, combine rhubarb, maple sugar, vanilla, water and salt.
  3. Partially cover and bring to a simmer under medium-low heat for 30 minutes or until rhubarb is very saucy.
  4. Remove and discard vanilla bean.
  5. Let cool and serve over our Maple Yogurt Parfaits, Roasted Strawberry Ice Cream, Maple Vanilla Granola or Multi-Grain Pancakes & Waffles.
