When you’re in the mood for something bright in the middle of winter, pour this dressing over a grain bowl full of quinoa, farro, grilled chicken, cucumbers and shaved carrots. It’s delightfully fresh with just the right amount of salty sweetness.

INGREDIENTS

  • 1/4 cup grated parmesan​
  • 2 cloves garlic, minced​
  • 2 tablespoons minced shallot​
  • 1 tablespoon chopped chives​
  • 1 teaspoon Sweet Maple Mustard​
  • 1/4 teaspoon red chili flakes​
  • 1/8 teaspoon maple pepper​
  • Salt, to taste​
  • 1 tablespoon maple syrup​
  • 3 tablespoons white wine vinegar​
  • 1/3 cup extra-virgin olive oil​

INSTRUCTIONS

  1. In a bowl or salad dressing jar, combine the parmesan, garlic, shallot, chives, sweet maple mustard, red chile flakes, maple pepper, salt, maple syrup and white wine vinegar. Stir with a fork or small whisk.
  2. As you stir, gradually pour in the extra virgin olive oil. Keep stirring to emulsify. Adjust seasonings to your preferred taste!
