No-Bake Maple Blueberry Yogurt Granola Bars

For an easy something sweet look no further than these granola yogurt bars! There’s no need to add extra heat to your kitchen in the middle of summer, and this recipe requires no pre-heating or baking. We lightly toast the old fashioned oats in a cast iron skillet for a few minutes before adding to the maple and coconut oil to achieve that taste of baked granola. Maple sweetened layers lead to a satisfying snack that can be enjoyed for breakfast and dessert!

INGREDIENTS

  • 1 1/2 cups old fashioned oats​
  • 1 1/2 teaspoons cinnamon​
  • 1/8 teaspoon salt​
  • 1/3 cup maple syrup​
  • 1/2 cup coconut oil​
  • 1/2 cup frozen blueberries​
  • 1 tablespoon lemon juice​
  • 1 tablespoon maple sugar​
  • 3/4 cups plain Greek yogurt​
  • 3 tablespoons maple syrup​

INSTRUCTIONS

  1. Toast the oats in a cast iron skillet over medium-high heat, stirring occasionally, until aromatic, about 3 minutes.
  2. Add the toasted oats to a medium bowl and stir in the cinnamon and salt.
  3. Combine the maple syrup and coconut oil in a glass measuring cup and microwave for 30 seconds. Stir together until combined. Pour the liquid into the toasted oats and stir together until completely combined.
  4. Fit a quarter sheet pan or 8×8 baking dish with parchment paper. Shape the granola into a 6×6 square. Freeze for at least 1 hour until set.
  5. Meanwhile, combine the blueberries, lemon juice and maple sugar in a small saucepan over medium-high heat. Stir occasionally until the blueberries begin to break down and form a syrup, about 5-7 minutes. (We leave a few blueberries un-smushed for texture purposes, but you can smash all blueberries with a wooden spoon and cook for 4-5 minutes longer if you prefer a smoother syrup.)
  6. In a small bowl, stir the Greek yogurt and maple syrup together.
  7. Pour the yogurt over the set oats, and spread to each corner. Dollop the blueberry syrup over the yogurt and swirl into the mixture. Freeze for at least an hour before cutting into bars!
